Cherry tomatoes, roasted corn and fresh mint add a vibrant splash of color to this refreshing salad. If you don't have a spiralizer, you can shred the zucchini using a grater or mandolin.
INGREDIENTS

1 medium zucchini

1/2 cup Cherry Tomatoes

1/4 cup Roasted Corn

1/4 cup feta cheese

1 tbsp Fresh Mint

1/4 cup olive oil

2 tbsp lemon juice

2 tsp Salt

1/4 tsp Pepper, Black
DIRECTIONS

Shred zucchini. Season with salt; set aside in sink for 30 to 60 minutes.

Squeeze water and salt out of zucchini.

Mix olive oil, lemon juice and pepper together. Pour into bottom of Mason jar.

Add the shredded zucchini, then the cherry tomatoes, then the feta cheese and then the roasted corn. Top with chopped mint leaves.

Scoop into a mason jar and seal until ready to eat.
