Here you'll fill each “boat” with vegan chili (pick an organic canned variety), soft cashew vegan cheese and scallions. Then comes the fun part: picking it up and eating it -- no utensils required (though you might want to keep some napkins at the ready).

1 Whole Grain Baguette (Side Portion)

2 cups Vegan Chili

1 1/2 oz Scallion French-Style Soft Cashew Cheese

2 medium scallions
DIRECTIONS

Split an 8-ounce (ideally about 18- to 20-inch long) whole grain baguette in half lengthwise (sandwich-style).

Scoop out the doughy portion of the baguette halves to form “boats.” (Note: Aim for 2 1/2-ounce baguette “boats” each; 5 ounces total.) Set aside.

Heat chili in a saucepan until heated through.

Serve chili in the “boats,” sprinkle bowls with vegan cheese (such as Treeline Scallion French-Style Soft Cheese) and scallions, and serve.
