2 small eggplant

1/2 cup marinara sauce

1/4 tbsp grated parmesan cheese
DIRECTIONS

Preheat the oven to 350 degrees.

Slice eggplant into ½-inch thick pieces.

Spray eggplant with olive oil cooking spray.

Bake eggplant 3 to 5 minutes per side until just done.

Layer with sauce and cheese.

Put back in oven and bake until the sauce is heated through.
