Oatmeal is just as good when it’s savory as when sweet -- maybe even better!
INGREDIENTS

2 1/2 cups low-sodium vegetable broth

3 stalk scallion(s)

1 cup Old-fashioned Oats

15 serving Tomato, Grape

2/3 cup low-fat cottage cheese

5 oz Baby Spinach Salad

1 tsp Grated lemon zest

3/4 tsp sea salt

1/2 tsp ground black pepper
DIRECTIONS

Bring the broth (or water) and scallions to a boil in a large saucepan.

Reduce heat to medium, add the oats and tomatoes, and stir occasionally until fully cooked, about 5 minutes. Add the cottage cheese and spinach and stir until the spinach is wilted and cottage cheese is fully heated, about 2 minutes.

Remove from the heat, stir in the lemon zest, salt, and pepper, and serve.
