INGREDIENTS

1 oz Soft Goat Cheese

1 tbsp Yogurt, Greek, Nonfat, Plain

1/2 tsp White Balsamic Vinegar

1 garlic clove
-
1/8 tsp Black Pepper, Ground

1 Whole Grain Bun
-
1 cup Grilled Vegetable Mix
DIRECTIONS

In a small bowl, stir together the goat cheese, yogurt, vinegar, garlic, and black pepper until well combined.

Spread the goat cheese mixture evenly on both cut surfaces of the bun. On the bottom bun portion, layer the vegetables (use chilled leftover grilled veggies; pat dry of excess liquids) on the bottom bun portion. Place on the bun top for form a sandwich.

Grill in a preheated panini grill over medium-high until well toasted, about 6 minutes.
