White Bean and Mushroom Pizza

Pizza without the guilt! This version has lots of tasty toppings.

INGREDIENTS

SERVES 1

  • 1 whole-wheat pitas (4-inch)
  • 1/2 tomato(es)
  • 2 tsp extra-virgin olive oil
  • 3 cups baby spinach
  • 1 cup sliced mushrooms
  • 1/2 shallot(s)
  • 1/2 garlic clove
  • 1/2 cup canned white beans
  • 1 dash salt and pepper
  • 1 tsp balsamic vinegar

DIRECTIONS

1 Preheat oven to 400F and line a baking sheet with parchment.
2 Top pitas with tomato slice and place on baking sheet and cook 12-13 minutes or until edges are golden.
3 Meanwhile, place olive oil in a pan and sauté spinach, mushrooms, shallots, with garlic, until spinach is just wilted.
4 Remove pitas from oven and top with beans.
5 Divide sautéed spinach mixture onto each pita.
6 Season with salt, pepper and vinegar.
