Pizza without the guilt! This version has lots of tasty toppings.

1 whole-wheat pitas (4-inch)

1/2 tomato(es)

2 tsp extra-virgin olive oil

3 cups baby spinach

1 cup sliced mushrooms

1/2 shallot(s)

1/2 garlic clove

1/2 cup canned white beans
-
1 dash salt and pepper

1 tsp balsamic vinegar
DIRECTIONS

Preheat oven to 400F and line a baking sheet with parchment.

Top pitas with tomato slice and place on baking sheet and cook 12-13 minutes or until edges are golden.

Meanwhile, place olive oil in a pan and sauté spinach, mushrooms, shallots, with garlic, until spinach is just wilted.

Remove pitas from oven and top with beans.

Divide sautéed spinach mixture onto each pita.

Season with salt, pepper and vinegar.
