Quinoa is an excellent grain to add to meals or salads. It's a good source of both carbohydrates and protein.
INGREDIENTS

2 cups baby spinach

1 garlic clove

2 tsp extra-virgin olive oil

2/3 cup cooked quinoa

1/4 cup dried cranberries

8 almonds
-
1/4 lemon
-
1 dash salt and pepper
DIRECTIONS

Saute spinach with garlic and olive oil.

Toss with cooked quinoa.

Add cranberries, pine nuts, and toss.

Dress with lemon juice, salt and black pepper.
