This open-faced sandwich lots of filling protein and fiber, and antioxidants from the cranberries.

1/2 cup shredded red cabbage

1 tsp agave nectar

1/2 tsp red wine vinegar

1 tbsp dried cranberries

2 tsp whole grain mustard

2 whole-grain bread slice(s)

1/2 cup canned black beans

1 tbsp pine nuts
DIRECTIONS

Line a broiler rack with foil and place about 4 from heat. Preheat broiler.

Combine cabbage, agave nectar, vinegar, cranberries, and 1 teaspoon mustard in a bowl.

In a small bowl, mash black beans with salt and pepper.

Layer bread with the bean spread, then add cabbage mixture and pine nuts.

Broil for 3 minutes.
