Tzatziki Veggie Wraps

Healthy Vegetarian wrap with creamy homemade tzatziki sauce. Makes 4 wraps

INGREDIENTS

SERVES 4

  • 136 g Tortillas
  • 1 cup Broccoli
  • 1 medium raw Green-bell Pepper
  • 1 middle size Red Pepper
  • 1 medium Yellow Onion
  • 2 cups Button Mushroom
  • 2 cups Greek Yogart 2%
  • 1/2 cup Dill Weed, Fresh
  • 2 tbsp Garlic Powder
  • 1 tsp Salt
  • 1 tsp Pepper*
  • 2 tbsp Extra Virgin Olive Oil
  • 4 cups Spinach
  • 2 oz goat cheese
  • 1 tbsp Paprika

DIRECTIONS

1 Tzatziki sauce:
2 Mix yogurt, dill, salt, pepper and garlic powder together. Let sit while you do your prep w/ veggies so the flavours have time to soak into the yogurt.
3 Heat frying pan with extra virgin olive oil.
4 Cut all veggies into long slices.
5 Make sure broccoli is smaller than bite-size.
6 When pan is hot enough throw in all of your veggies except the spinach.
7 Cook veggies with paprika, salt and pepper until a bit browned.
8 Spread goat cheese on to your wraps
9 Add tzatziki to taste
10 Add spinach
11 Add hot veggies
12 Enjoy!
