DIRECTIONS

In a medium skillet over medium heat, add olive oil, mushrooms, and spinach.

Saute until spinach is wilted.

Add garlic and stir for 1 minute.

Transfer to a mixing bowl and add ricotta cheese, parmesan cheese, salt, and pepper — stir to combine.

Lay 18 wonton wrappers out on a countertop or cutting board.

Measure out 1 tablespoon of ricotta filling on each wonton square.

Fill a small bowl with water.

Brush water on the outside edges of the square and place another square on top.

Take a fork and crimp down on the sides, sealing the ravioli.

Repeat for each ravioli.

Fill a saucepan half-way with water and bring it to a boil.

Place 4 to 5 ravioli in the boiling water for 1-2 minutes or until they float.

Carefully remove from the water and place on a serving platter.

Serve with a drizzle of olive oil and additional parmesan cheese.
