To add a sweet kick to your salad, all you need to do is blend some fruit, extra-virgin olive oil, lime juice, red onion, fresh mint and pinch of sea salt. Nearly any fruit will do. Our recipe contains mango for a creamy, sweet, tropical twist. Mangoes are a key source of potentially cancer-protective polyphenols.
INGREDIENTS

2 cups mango

1/4 medium red onion

1/4 cup Olive Oil, Extra Virgin

1 yields lime juice

1/4 tsp Sea Salt

10 leaf fresh mint leaves
DIRECTIONS

Cube mango, removing seed and peel. (Note: Yield is about 1 1/2 cups cubes; 9 ounces.)

Add the mango cubes, red onion, olive oil, lime juice, and salt to a blender. Cover and puree on high speed. Add the mint and pulse a few times.

Use immediately or store in a sealed jar in the refrigerator for 3 to 4 days.
