Teff, a gluten-free grain that grows in Ethiopia, is naturally high in protein and minerals, making it the pre-workout choice of many long-distance runners. It's loaded with iron, which helps to transport oxygen throughout the body.
INGREDIENTS

1/3 cup Dry Teff

1/3 cup Cashews

1/3 cup Kefir

2/3 cup raw beets

1 medium banana

4 tbsp Lemon Juice

1 tbsp Flax Seeds

1/2 cup Pomegranate Seeds
DIRECTIONS

Bring 1/3 cup of dry teff to a boil, cover and turn off the heat until the water is absorbed.

Pickle, roast, and cube 1 medium beet.

Thinly slice 1 banana.

Add the teff, beets, banana, kefir, and 1/3 cup of cashews to the bowl, then dress everything with 4 tablespoons of lemon juice.

Scatter 1 tablespoon of flax seeds and 1/2 cup of pomegranate seeds over everything.
