Beans and quinoa offer a unique twist on the traditional rice and beans dish.

INGREDIENTS

SERVES 6

  • 1 lb Ground Beef Chuck 83/17
  • 1/4 cup Dark Brown Sugar, Pure Cane
  • 1 cup tomato sauce
  • 1/2 tsp Kosher Salt
  • 1/2 tsp Soy Sauce
  • 1/2 tsp Red Wine Vinegar
  • 1/2 tsp Garlic Powder
  • 1 cup Onions
  • 1 cup Red Bell Peppers
  • 1/2 cup Carrot
  • 1/2 cup Zucchini
  • 6 100% Whole Grain Hotdog Buns

DIRECTIONS

1 Place ground chuck (choose a lean-to-fat ratio of 90/10 or 85/15) in a slow cooker, and break into small pieces with a spoon.
2 Add brown sugar, tomato sauce, kosher salt, soy sauce, red wine vinegar and garlic powder; stir to combine.
3 Add onion, red bell pepper, carrot and zucchini.
4 Stir again to combine.
5 Cover and cook on low for 6 to 7 hours. Serve on toasted whole-grain buns.
