For a sweeter taste, caramelize the cauliflower (roast on high until the edges are brown and crispy, about 45 minutes) and pair with caramelized onions if you’d like.
INGREDIENTS

2 Cauliflower (raw), Medium Head

3 tbsp extra-virgin olive oil

1 medium Sweet Onions

1 tsp Balsamic Vineger
DIRECTIONS

Preheat oven to 500.

Chop cauliflower into florets.

Place cauliflower in a large dish and drizzle with half of olive oil. Season with salt and pepper if desired.

Bake until they're browned and crispy for about 45 minutes.

Coarsely chop onion.

Next, heat remaining olive oil over medium heat in a large pan. Add onion and balsamic vinegar. Add salt and pepper and cook until caramelized.

Once done, combine cauliflower and onions.
