1/2 cup shredded red cabbage

1/2 tsp honey

1/2 tsp red wine vinegar

1 tbsp dried cranberries

2 tsp whole grain mustard

1/4 block Extra Firm Tofu

2 oz sliced reduced-fat Swiss cheese
DIRECTIONS

Line a broiler rack with foil and place about 4” from heat. Preheat broiler.

Combine cabbage, honey, vinegar, cranberries, and mustard in a bowl.

Lay cheese on top of turkey and roll into a spiral.

Place turkey roll-up on broiler rack and broil until cheese melts.

Remove roll-ups from pan and serve with slaw.
