Sunny-Side-Up Fried Rice

When you have some extra vegetable fried rice in the fridge, all you need to do is quickly reheat a cupful and top with an egg.

INGREDIENTS

SERVES 1

  • 1 tsp grapeseed oil
  • 1 Free Range Egg
  • 1 cup Vegetable Fried Rice
  • 1 pinch Sea Salt, Coarse, Mediterranean
  • 1/4 tsp Black Sesame Seeds

DIRECTIONS

1 Make sure the leftover vegetable fried rice is chilled.
2 Heat the oil in a small (PFOA-free) nonstick skillet over medium-high heat. Add the egg and fry until just set and sunny-side-up, about 1 1/2 minutes. Remove from heat and let stand in skillet to complete the cooking process, about 1 1/2 minutes. Add a pinch of salt.
3 Meanwhile, place the chilled vegetable fried rice in a microwave-safe bowl. (Hint: Use Chinese takeout leftovers!) Cover loosely with unbleached parchment paper and microwave on high until fully reheated, about 1 minute.
4 Top the rice with the egg and sprinkle with the sesame seeds.
