Adding fruit to salad can turn an ordinary bowl (or jar!) of vegetables into a fun treat. Here we mix sliced strawberries with cucumbers for a salad that’s both sweet and refreshing.
INGREDIENTS

1/4 cup mixed green salad

1/4 cup grilled boneless, skinless chicken breast

1/4 cup strawberries

1/4 cup cucumber

1/4 cup Organic Microgreens

3 tbsp feta cheese
-
1 tbsp chia seeds
-
2 tbsp olive oil
-
1 tbsp balsamic vinegar

1/4 tsp Salt
-
1/4 tsp Pepper, Black
DIRECTIONS

Whisk together the olive oil, balsamic vinegar, salt and pepper. Pour into the bottom of a Mason jar.

Add the cucumbers, half of the strawberries, microgreens, chicken, and then the rest of the strawberries.

Top with mixed greens, feta cheese, lemon zest and chia seeds.

Seal until ready to eat.
