First, use skyr instead of Greek yogurt for less tartness. Don’t forget the few drops of rose water; it’ll truly make the skyr taste flowery! Next, don’t be shy with the slivered almonds; they contain plenty of healthy fats, fiber and protein. To serve, layer the ingredients in a pilsner glass and top with a whole strawberry.
INGREDIENTS
SERVES 2
-
1/3 cup Slivered Almonds
-
1 1/2 cups Plain Skyr
-
1 1/2 tbsp Coconut Nectar
-
1 1/4 tsp Pure Vanilla Extract
-
1/8 tsp Pure Almond Extract
-
1/3 cup Granola Cereal
-
1 1/3 cups frozen strawberries
-
2 medium Strawberries, Organic
DIRECTIONS
1
Add almonds to a medium skillet over medium-high and cook while stirring until toasted; transfer to a heat-proof bowl and set aside.
2
In a medium bowl, whisk together the skyr (or Greek yogurt), coconut nectar (or honey), vanilla extract, rose water, and almond extract. If desired, add a few drops more rose water to make the rose flavor more prominent.
3
Layer in two pilsner or other 12-ounce beverage glasses as desired the yogurt mixture, granola, (thawed) sliced strawberries, and toasted almonds. (Hint: Use a pastry bag to pipe the skyr mixture into the pilsner or other glasses.) Garnish each with a fresh strawberry.
