Pizza with Sunny-Side Up Egg, Spinach, Broccolini and Mushrooms

This egg-topped pie is a sunnier, happier, and healthier way to start the morning than a cold, floppy leftover slice. Sarah Gim @thedelicious adds mushrooms, baby spinach, and broccolini to the pizza for an extra boost of vitamins and fiber.

INGREDIENTS

SERVES 4

  • 1 Pizza Dough
  • 1/4 cup tomato sauce
  • 1/2 cup shredded part-skim mozzarella cheese (low moisture)
  • 1/4 cup Salad, Baby Spinach
  • 5 pieces Broccolini
  • 1/2 cup Mixed Mushrooms
  • 2 Large Grade AA Eggs
  • 1 pinch Sea Salt
  • 1 serving Pepper, Ground

DIRECTIONS

1 Heat oven to 425 degrees. Line a baking sheet with parchment paper.
2 Prepare crust on the parchment-lined baking sheet according to package directions
3 Spread crust with tomato sauce, then shredded cheese, then spinach, broccolini, and mushrooms.
4 Bake pizza until crust is baked through and golden, and cheese is melted.
5 Remove baking sheet with pizza from the oven. Crack 2 eggs into the center of the pizza, then return to oven and bake for additional 6-8 minutes, or until the egg whites have set. If you prefer egg yolks to be more cooked (they will still be fairly runny after 8 minutes), return the baking sheet to the oven and bake for a few minutes longer, or until the yolks are set.
6 Remove baking sheet from oven, garnish with any chopped fresh herbs and optional toppings like grated Parmesan cheese, chopped fresh basil, oregano, and parsley, crushed red pepper
7 Slice pizza (directly through egg yolks!), and serve immediately, straight from the baking sheet.
