5-Minute Spicy Vegetarian Mexican Bake

Here’s what you’ll layer: corn tortillas, black beans, pico de gallo, corn, salsa verde and pepper jack cheese. Then melt it all together and garnish with cilantro.



  • 12 , medium corn tortilla (without salt)
  • 15 oz Canned Black Beans
  • 1 1/4 cups Add-Ons, Pico de Gallo
  • 2 1/2 cups Frozen Corn-- Organic Brand
  • 1 cup Salsa Verde
  • 14 oz Shredded Pepper Jack Cheese
  • 1/4 cup Fresh Cilantro Leaves


1 In a 10-inch-round microwave-safe dish, make three alternating lasagna-like layers using corn tortillas, beans, pico de gallo, corn, salsa verde (tomatillo salsa), and cheese. Firmly pack layers.
2 Cover and chill overnight, if desired.
3 Uncover. Then loosely cover with unbleached parchment paper and microwave on HIGH for 5 minutes, or until hot and cheese is fully melted. (NOTE: Microwave cooking times vary.)
4 Sprinkle with fresh cilantro leaves to serve. If desired pair with guacamole, sour cream and/or additional salsa.
