Spicy Potato, Red Pepper and Chicken Sausage Skillet for Two

This dish tastes a little spicy from red-hot chili pepper, a little sweet from sweet red bell pepper and very savory from organic chicken sausage (or, if you prefer, pick vegan sausage) and baby potatoes (choose tricolor for eye appeal).



  • 1 1/2 tbsp Extra Virgin Olive Oil
  • 1 lb pound tri-color baby creamer potatoes
  • 1 medium red bell pepper
  • 1 medium red onion
  • 1 Peppers, hot chili, red, raw
  • 1/8 tsp Sea Salt
  • 2 link Organic Mild Italian, Chicken Sausage
  • 2 medium scallions
  • 1 clove garlic
  • 2 tsp lemon juice
  • 1/4 cup Parsley


1 Heat the oil in a large cast-iron or other stick-resistant skillet over medium. Add the potatoes, bell pepper, onion, chili pepper, and salt, increase heat to medium-high, and stir to combine. Cover and cook until the potatoes are nearly cooked through, about 10 minutes, stirring twice throughout cooking.
2 Remove the lid, add the chicken sausage (or vegan sausage), scallions, garlic, and lemon juice, and sauté until potatoes are fully cooked and browned as desired, about 5 minutes. (Hint: If ingredients start to stick to skillet, drizzle in a little more olive oil.)
3 Stir in the parsley, adjust seasoning, and serve immediately from the skillet.
