Layering colorful, antioxidant-rich vegetables and lean protein in a jar is an exciting and nutritious way to enjoy a salad.

1/4 cup Coconut Milk Light

1/4 cup All Natural Peanut Butter

2 tbsp low-sodium soy sauce

1 tbsp agave nectar

2 tsp Sriracha sauce

2 garlic clove

1 tbsp Lime Juice Raw

16 oz Cooked Medium Shrimp

1 cup Organic Edamame
-
1 red bell pepper
-
1 yellow bell pepper

1 carrot(s)

1 cup Cooked Brown Basmati Rice

1/4 cup fresh cilantro

Make the Coconut Peanut Sauce. Whisk together the first 7 ingredients (coconut milk through lime juice). Taste and add more lime juice if necessary.

Layer coconut peanut sauce (make sure sauce is on the bottom), shrimp, edamame, brown rice, peppers carrots and cilantro in mason jars.

When ready to eat, simply shake mason jar to evenly distribute sauce. Enjoy!
