Shrimp gives this salad protein without added fat, and lettuce and hearts of palm pump up the fiber.
INGREDIENTS

2 cups mixed baby greens

9 large raw shrimp

1/4 medium avocado

2 canned hearts of palm spears

1/2 cup canned white beans

1/4 lemon
-
2 tsp extra-virgin olive oil

1 dash Salt and Pepper, to taste
DIRECTIONS

Steam shrimp (peeled and deveined), in a covered saucepan over medium heat until shrimp are cooked throughout, about 8 minutes.

In a serving bowl, toss greens with shrimp, avocado, and hearts of palm.

Squeeze lemon and olive oil on top of salad and season with salt and pepper.
