Shrimp and Avocado Lunch Salad

Shrimp gives this salad protein without added fat, and lettuce and hearts of palm pump up the fiber.

INGREDIENTS

SERVES 1

  • 2 cups mixed baby greens
  • 7 large raw shrimp
  • 1/4 medium avocado
  • 1/4 lemon
  • 2 tsp extra-virgin olive oil
  • 1 dash salt and pepper
  • 1/4 cup Palm Hearts, Salad Cut

DIRECTIONS

1 Steam shrimp (peeled and deveined), in a covered saucepan over medium heat until shrimp are cooked throughout, about 8 minutes.
2 In a serving bowl, toss greens with shrimp, avocado, and hearts of palm.
3 Squeeze lemon and olive oil on top of salad and season with salt and pepper.
