The caramel in this recipe is made from soaked dates and their soaking water. It’s livened up a bit with a good pinch of salt and a dash of cinnamon. The salt offsets the sweetness of the dates, and the cinnamon brings it to a more standard caramel color and lessens some of the dates’ sugary effect on your blood. You can use any dried fruits, nuts and seeds that you like.

2 medium cooked sweet potato

1 cup California Whole Pitted Dates

1 cup Hot Water

3 tbsp Pumpkin Seeds

2 tbsp Dried Cherries

2 tbsp Dried Cranberries

1 tbsp Toasted Salted Hemp Seeds

Make sure your sweet potatoes are sliced 1/4 thick and roasted for 25-35 minutes until crispy before beginning this recipe

Soak dates in hot water for 15 minutes

Blend soaked dates in a blender with 3/4 cup soaking water, cinnamon, and salt until creamy and smooth

Place fries on a platter and top with caramel sauce, then scatter each trail mix item over the top
