Legendary civil rights activist Rosa Parks scribbled this pancake recipe on the back of an envelope. It features one surprising ingredient: protein-rich peanut butter.
INGREDIENTS

1 cup Flour, All-Purpose

2 tbsp Baking Powder

1/2 tsp Kosher Salt

2 tbsp granulated (white) sugar

1 large whole egg
-
1 1/4 cups whole milk

1/3 cup creamy peanut butter (without salt)

1 tbsp Oil, canola
DIRECTIONS

Sift together flour, baking powder, salt and sugar

Melt peanut butter in the microwave

Whisk together melted peanut butter, egg, milk and oil

Combine wet ingredients with dry ingredients

Cook at medium-high heat on griddle
