Preheat the oven to 400 degrees Fahrenheit.

Coat baking sheet with cooking spray.

In a medium bowl, whisk together chipotle powder, cumin, salt, lime juice and olive oil.

Add cauliflower florets and coat well.

Place the cauliflower florets in a single layer on the baking sheet and roast for 30 minutes or until tender.

For crema, blend avocado, Greek yogurt, lime juice, cilantro, salt and pepper in a food processor until smooth and creamy.

Assemble tacos with tortillas, roasted cauliflower and red cabbage. Drizzle with avocado crema and top with cilantro.
