Coming in at under 150 calories, this seasonal dessert definitely hits the spot. Pumpkin provides an oasis of health benefits – it is known to boost the immune system, protect skin through its carotenoids, and even reduce the risk of cancer by boosting the antioxidant beta-carotene. Add spices for a more festive flavor and additional benefits, including lower blood sugar levels from cinnamon and ginger's anti-inflammatory properties.

INGREDIENTS

SERVES 6

  • 2 cups 1% low-fat milk
  • 1/3 cup Dark Brown Sugar
  • 1/4 cup Corn Starch
  • 2 large whole egg
  • 1 1/2 cups canned pumpkin
  • 3/4 tsp cinnamon
  • 1/2 tsp Nutmeg (Ground)
  • 1/4 tsp ground ginger
  • 1/4 tsp Cloves, Ground
  • 1/4 tsp Kosher Salt

DIRECTIONS

1 Whisk milk, sugar, and cornstarch in a large saucepan; bring to a boil.
2 Boil three minutes, whisking constantly.
3 Beat eggs with a whisk in a large bowl.
4 Gradually add half the hot milk mixture to the beaten eggs. Return milk-egg mixture to pan.
5 Cook over medium heat three minutes, or until thick, whisking constantly.
6 Remove from heat; stir in pumpkin, salt, all of the ground spices and kosher salt.
7 Spoon evenly into six (6-ounce) custard cups. Let cool, and chill for about 30 minutes, or until pudding is set.
