2 cups 1% low-fat milk

1/3 cup Dark Brown Sugar

1/4 cup Corn Starch

2 large whole egg

1 1/2 cups canned pumpkin

3/4 tsp cinnamon

1/2 tsp Nutmeg (Ground)

1/4 tsp ground ginger

1/4 tsp Cloves, Ground

1/4 tsp Kosher Salt
DIRECTIONS

Whisk milk, sugar, and cornstarch in a large saucepan; bring to a boil.

Boil three minutes, whisking constantly.

Beat eggs with a whisk in a large bowl.

Gradually add half the hot milk mixture to the beaten eggs. Return milk-egg mixture to pan.

Cook over medium heat three minutes, or until thick, whisking constantly.

Remove from heat; stir in pumpkin, salt, all of the ground spices and kosher salt.

Spoon evenly into six (6-ounce) custard cups. Let cool, and chill for about 30 minutes, or until pudding is set.
