8 oz Red Creamer Potatoes

7 oz Organic Firm Tofu

1 large Green Bell Pepper

4 stalk scallion(s)

1 tsp Cajun Seasoning

1/4 tsp sea salt

2/3 cup Pico de gallo

1/4 cup Parsley, Raw Fresh

Heat the oil in a large (PFOA-free) nonstick skillet over medium-high heat. Add the potatoes, tofu, bell pepper, white part of the scallions, Cajun seasoning, and salt and cook while stirring occasionally until the potatoes are lightly caramelized and cooked through, about 10 minutes.

Add the pico de gallo and green part of the scallions and cook while stirring until heated through, about 1 1/2 minutes. Taste and adjust seasoning.

Transfer to a serving bowl or individual plates and sprinkle with the parsley.
