Pasta salad can be a scrumptious and satisfying snack and it provides a delicious way to pump up your vegetable intake as well.
INGREDIENTS

1/2 cup dry whole-wheat pasta

1 tbsp Pesto Sauce Mix

1 oz Baby Spinach
DIRECTIONS

Cook the pasta according to package directions. Drain, reserving 2 tsp. of the pasta cooking liquid. Toss the pasta with ice cubes (or rinse with cold water) until cool. Drain again.

In a medium bowl, stir together the pesto sauce and the 2 tsp. cooking liquid until well combined. Add the cool pasta and toss to combine; add the spinach and toss to combine.

Add salt to taste, if desired.

Optional Add-On: Chopped walnuts
