2 cap portobello mushroom

2 tsp extra-virgin olive oil

1 cup cooked quinoa

1/2 cup canned white beans

2 cups baby spinach

1/2 cup cherry tomatoes

Saute mushroom slices with olive oil, drain, and place in a bowl.
