Pistachio-Crusted Goat Cheese Ball

INGREDIENTS

SERVES 6

  • 4 oz Soft Goat Cheese
  • 1/3 cup part-skim ricotta cheese
  • 1 tsp Apple Cider Vinegar
  • 1/2 tsp ground black pepper
  • 1/3 cup Shelled Pistachios

DIRECTIONS

1 In a small bowl, stir together with a fork the goat cheese, ricotta cheese, vinegar, and pepper until well combined. Cover and chill until ready to serve.
2 Form the cheese mixture with clean hands into a round or football-shaped ball, firmly roll in the pistachios until fully coated, and serve.
