Pistachio Crunch Salad

This salad has pistachios and crackers adding extra protein and crunch.

INGREDIENTS

SERVES 1

  • 2 cups baby spinach
  • 1/2 cucumber(s)
  • 1/2 yellow bell pepper
  • 1/2 cup canned chickpeas
  • 18 shelled pistachios
  • 4 gluten-free crackers
  • 1 tsp balsamic vinegar
  • 2 tsp extra-virgin olive oil
  • 1 dash salt and pepper

DIRECTIONS

1 Place spinach in bowl.
2 Add remaining ingredients and toss.
