The pudding itself if made from a blended mixture of banana, coconut milk beverage, chia seeds (which provide still more protein), coconut nectar, pure vanilla extract and a pinch of sea salt.

2 tbsp Peanuts, Roasted, Salted

Add the banana, coconut milk beverage (or almond milk), chia seeds, coconut nectar, vanilla extract, and salt to a blender. Cover and puree on high speed until well combined, about 1 minute. Pour into a 1 1/2-cup capacity serving bowl. Cover and chill overnight.

Uncover, sprinkle with the cacao nibs and peanuts, and serve.
