This ham and egg bistro salad is a deliciously nutritious way to start your day. But don’t just serve this in the morning; enjoy it anytime as an all-day breakfast entree. You’ll get high-quality protein from the egg and organic ham. If you prefer to go meat-free, swap the ham for naturally smoked mozzarella cheese.
INGREDIENTS

5 oz Mache Rosettes

6 oz Cubed Ham

3 tbsp Lemon Juice

2 tbsp Olive Oil, Extra Virgin

1/2 tsp Ground Black Pepper

1/2 tsp Sea Salt

1 tbsp Avocado Oil

4 Organic Eggs

2 tbsp Chives, raw
DIRECTIONS

Arrange mache (or baby spinach) and ham cubes onto individual plates or flat bowls. Set aside.

In a liquid measuring cup, whisk together lemon juice, olive oil, pepper, and 1/4 teaspoon of the salt. Set aside.

Heat avocado oil (or grapeseed oil) in an extra-large skillet (or two skillets) over medium-high. Add eggs and fry until browned and crisped on the bottom. Sprinkle eggs with remaining 1/4 teaspoon salt.

Slide each egg onto a salad, sprinkle with the lemon vinaigrette and chives, and serve.
