This black bean open-faced sandwich combines sweet honey, tart cranberries and savory Swiss cheese.
INGREDIENTS

1/2 cup shredded red cabbage

1/2 tsp honey

1/2 tsp red wine vinegar

1 tbsp dried cranberries

2 tbsp whole grain mustard

1 whole-grain bread slice(s)

1/4 cup canned black beans

1 oz sliced reduced-fat Swiss cheese
DIRECTIONS

Line a broiler rack with foil and place about 4†from heat. Preheat broiler.

Combine cabbage, honey, vinegar, cranberries, and mustard in a bowl.

Mash black beans with salt and pepper in a small bowl.

Layer the bean spread on the bread, then the cabbage mixture and cheese.

Broil 3 minutes or until cheese is melted.
