Who doesn’t love an energy bite? Oatmeal raisin cookie dessert hummus balls keep all of the energy in a bite-sized morsel.
INGREDIENTS
SERVES 4

15 oz Chickpeas (garbanzo beans, bengal gram), mature seeds, canned, drained, rinsed in tap water

1/2 cup Rolled Oats

1 tsp Vanilla extract

3 tbsp brown sugar

1/2 tsp cinnamon

1/4 tsp Iodized Salt

2 tbsp 2% reduced-fat milk

1/4 cup raisins
DIRECTIONS

Drain and rinse chickpeas. Remove skins by gently squeezing and separating the skin from the bean.

Add chickpeas, 1/4 cup oats, vanilla, brown sugar, cinnamon and salt to the food processor. Blend until smooth.

While the food processor is running, add in two tablespoons milk.

Remove from food processor and stir in remaining 1/4 cup oats and raisins

Form into one-inch balls.

Roll in extra oats if desired.
