Mexican Six-Layer Dip Dish

Mexican layer dip is a standard fixture on party tables across America.

INGREDIENTS

SERVES 1

  • 1/3 cup Vegetarian refried beans
  • 1/3 cup Original Guacamole
  • 1/3 cup plain low-fat Greek yogurt
  • 1/4 tsp chili powder
  • 1/3 cup shredded Monterey jack cheese
  • 6 Grape Tomatoes
  • 1 tsp 100% Lime Juice
  • 2 tbsp fresh cilantro
  • 1 oz Tortilla Chips, Baked, Yellow Corn

DIRECTIONS

1 On a dinner plate, spread in layers the beans, then the guacamole, forming a 5-inch diameter round stack.
2 In a small bowl, stir together the yogurt and chili powder; spread on top of the guacamole layer.
3 Sprinkle with the cheese.
4 In a small bowl, stir together the tomatoes and lime juice; sprinkle on top of the cheese.
5 Sprinkle with the cilantro. (TIP: You can use fresh ramps or scallions instead of cilantro if you prefer.)
6 Serve with the tortilla chips.
