Mediterranean Zoodles with Creamy Feta Dressing

So long, boring zucchini! Oven roasted zucchini is no longer the preferred way of eating this versatile vegetable. Try zoodles!

INGREDIENTS

SERVES 1

  • 1 medium zucchini
  • 1/2 cup Cherry Tomatoes
  • 1/2 cup Greek Yogurt
  • 1/4 cup Feta Cheese
  • 1 tbsp 2% reduced-fat milk
  • 1 tsp Basil, fresh
  • 1 tsp Dill Weed
  • 1 tsp Parsley

DIRECTIONS

1 Using a spiralizer, make noodles out of the zucchini.
2 Chop tomatoes and add to the zoodles.
3 In a small bowl, add Greek yogurt, feta cheese, milk, basil, dill, and parsley and stir well.
4 Pour creamy feta dressing over the zoodles immediately before serving.
