Lite Cobb Salad with Turkey Bacon

This "lite" version of the classic Cobb salad is perfect for helping your reach your weight goals.



  • 1 egg(s)
  • 2 turkey bacon slice(s)
  • 2 cups chopped romaine lettuce
  • 1/4 medium avocado
  • 1/4 cucumber(s)
  • 1/2 tomato(es)
  • 1 carrot(s)
  • 1 tsp balsamic vinegar
  • 1/4 lemon


1 Place egg in a small saucepan and cover with cool water by one inch. Over medium heat, bring water to a boil. Once water begins to boil, cover and remove from heat. Let sit for about 5 min and then run under cool water. Chop egg.
2 Cook the bacon in the microwave by placing stripes on a doubled paper towel and cook on high for 1 minute. Another option: Place bacon in a frying pan and cook over low heat; turn often, remove grease, and cook until desired crispness.
3 Place lettuce in salad bowl and add chopped vegetables.
4 Add egg and crumble in bacon.
5 Drizzle vinegar and squeeze lemon on top of salad.
