Lemony White Bean and Baby Arugula Salad

This salad is packed with nutrition, including protein. It also provides more fiber than most Americans get in a day! That said, if your body isn’t used to lots of fiber, consider divvying this salad into two mini-meals -- or replace half of the beans with tuna or shrimp.

INGREDIENTS

SERVES 1

  • 1 tbsp Lemon Juice
  • 1 tbsp lemon zest
  • 1 garlic clove
  • 1 pinch sea salt
  • 15 oz Organic Great Northern Beans
  • 3 tbsp Red Onion
  • 3 tbsp bell pepper (any color)
  • 3 cups arugula
  • 1 tbsp extra-virgin olive oil

DIRECTIONS

1 In a serving bowl, whisk together the lemon juice and zest, oil, garlic and salt.
2 Stir in the beans, onion and bell pepper. (TIP: You can make this with other white beans, such as cannellini beans. Also, consider making this with 1 1/2 cups of freshly prepared dry beans.)
3 Toss with the arugula.
