DIRECTIONS

Add mint, garlic, vinegar, broth, salt and pepper to a blender and pulse until smooth.

Pat lamb chops dry and season with salt and pepper.

Warm two saute pans over medium-high heat. When hot, spray both with vegetable oil.

After 1 minute, add mushrooms to one pan and lamb chops to the other.

Cook mushrooms 3 minutes without stirring, then season with salt and pepper, toss, season again and cook until golden brown (another 5-8 minutes).

Sear lamb chops 2 minutes, flip and cook 3 more minutes. (If you prefer them to be cooked to medium, cook 3-4 minutes.) Let rest 3 minutes.

Serve chops over mushrooms with small bowls of mint sauce for dipping.
