Lamb Chops With Mint Sauce and Mushrooms

Lamb provides an excellent source of omega-3 fats, which can decrease inflammation and heart disease risk. It’s also an excellent source of protein and a good source of zinc, which supports the immune system and reduces stress levels.

INGREDIENTS

SERVES 2

  • 40 leaf fresh mint leaves
  • 2 clove garlic
  • 1/2 cup Red Wine Vinegar
  • 1/2 cup Beef Broth
  • 1/4 tsp Kosher Salt
  • 1/4 tsp Ground Black Pepper
  • 1 sec Vegetable Oil Cooking Spray
  • 8 oz raw brown mushrooms
  • 2 serving Lamb, New Zealand, imported, leg chop/steak, bone-in, separable lean only, raw

DIRECTIONS

1 Add mint, garlic, vinegar, broth, salt and pepper to a blender and pulse until smooth.
2 Pat lamb chops dry and season with salt and pepper.
3 Warm two saute pans over medium-high heat. When hot, spray both with vegetable oil.
4 After 1 minute, add mushrooms to one pan and lamb chops to the other.
5 Cook mushrooms 3 minutes without stirring, then season with salt and pepper, toss, season again and cook until golden brown (another 5-8 minutes).
6 Sear lamb chops 2 minutes, flip and cook 3 more minutes. (If you prefer them to be cooked to medium, cook 3-4 minutes.) Let rest 3 minutes.
7 Serve chops over mushrooms with small bowls of mint sauce for dipping.
