To keep the fat content low, this soup uses only one source of fat from uncured bacon. Uncured bacon is free of nitrates which may cause cancer, and can be found at your local Whole Foods or specialty market. To serve as a main dish, simply increase the portion size to your liking.

  • 3 second Original No-Stick Cooking Spray
  • 7 slices Thick Sliced Uncured Hardwood Smoked Bacon
  • 1 lb carrot(s)
  • 1 onion
  • 1 tbsp Thyme, Fresh
  • 1/2 tsp Sea Salt, Coarse, Mediterranean
  • 2 dash Black Pepper
  • 4 garlic clove
  • 64 oz Low Sodium Chicken Stock
  • 3 1/2 cups Cannelini Beans Canned
  • 2 1/2 cups Kale, Raw

1 Heat a large soup pot over medium high heat. Spray with fat free cooking spray. Sauté chopped bacon until fat is rendered down and bacon is crispy (about 6 minutes). Remove cooked bacon with a slotted spoon (keeping as much fat in the pot as possible) and set aside.
2 Sauté carrots, onions and thyme in bacon fat until carrots begin to soften (about 5 minutes).
3 Add salt, pepper and garlic and sauté one minute.
4 Stir in chicken stock and reduce heat to medium. Bring to a gentle simmer.
5 Once simmering, add beans and kale and continue to simmer until kale is wilted.
6 Season with additional salt or pepper if necessary. Enjoy!
