Italian Roast Beef Roll-Ups

Protein-packed roast beef rolls served with crudité is a nutritious lunch or hearty snack. Substitute any raw vegetables.

INGREDIENTS

SERVES 1

  • 6 oz deli sliced roast beef
  • 1/4 cup roasted red bell pepper
  • 6 leaf fresh basil leaves
  • 2 tbsp Fresh Mozzarella
  • 1/2 carrot(s)
  • 1/2 cucumber(s)
  • 6 string beans
  • 1 tsp Olive Oil

DIRECTIONS

1 Place one piece of red pepper, 1 basil leaf, and one piece of cheese on each slice of roast beef.
2 Roll up each slice of beef tightly.
3 Serve with carrot, cucumber and string bean crudité, drizzle with olive oil, drizzle with olive oil.
