Crackers topped with tomatoes and protein-rich mozzarella cheese served with green beans makes a light, nutritious lunch.

INGREDIENTS

SERVES 1

  • 16 string beans
  • 1 tomato(es)
  • 13 gluten-free crackers
  • 3 tbsp fresh part-skim mozzarella cheese
  • 1 tbsp extra-virgin olive oil

DIRECTIONS

1 Steam green beans until al dente, drizzle with oil, and place at side of plate.
2 Place tomato and mozzarella slices at side of plate.
3 Enjoy beans, cheese and tomatoes with crackers.
