For a more complex chocolate flavor, Fabienne Soulies of LA-bakery Pitchoun uses a mix of dark and milk chocolate with cocoa powder that she stirs directly into the warming milk. Spiced with ground cinnamon and garnished with a cinnamon stick, this pot of chocolate deliciousness is perfect for the holidays. Soulies notes that added sugar isn’t necessary as it’s already built into the milk chocolate bar, but, if you like yours on the sweeter side, feel free to add sugar to the mixture. Garnish with cinnamon sticks to use as stirrers.

INGREDIENTS

SERVES 4

  • 4 cups 2% milk
  • 1 tbsp Cocoa Powder unweetened
  • 1 tsp Cinnamon, Ground
  • 80 g Dark Chocolate, 74%
  • 80 g Milk Chocolate
  • 1 tsp Organic Vanilla Extract

DIRECTIONS

1 Over low heat, warm the milk until small bubbles form but before the milk begins boiling. Be sure to not scald the milk or it won't have the best flavor.
2 Add the cocoa and then add the chocolates, stirring until melted.
3 Stir in the ground cinnamon.
4 Remove from heat. Divide between serving cups and garnish with cinnamon sticks.
