This recipe offers protein in not one, but five ways: eggs, egg whites, garbanzo bean flour, hemp protein powder and hemp seeds!
TIP: Use ripe bananas!
INGREDIENTS
SERVES 2
-
2 banana
-
3 egg(s)
-
1 egg white(s)
-
1 1/2 tsp pure vanilla extract
-
1 serving Pure Almond Extract
-
1/4 cup Vanilla, Organic Hemp Protein Powder
-
1/4 cup Garbanzo Bean Flour
-
3 tbsp Hemp Seed Hearts
-
2 tsp Baking Powder
-
1/2 tsp ground cinnamon
DIRECTIONS
1
In a medium bowl, mash the bananas with a potato masher or fork. Add the eggs, egg white, and extracts and whisk until well combined.
2
Stir in mixture of the protein powder, flour, hemp seeds, baking powder, and cinnamon until just combined.
3
Spritz a large nonstick (PFOA-free) skillet (or griddle) with cooking spray and heat over medium. In batches, ladle the batter onto the skillet, about 1/3 rounded cup per pancake. Cook until browned, about 2 to 2 1/2 minutes per side. (Hint: When making pancakes in batches, you can keep the prepared pancakes warm in a 200°F oven until all pancakes are done.)
4
Serve warm as desired.
5
Serving idea: Drizzle with pure maple syrup and sprinkle with fresh seasonal fruit.
