Sweet potatoes are complex carbohydrates that pack a ton of vitamins and minerals, including beta-carotene, vitamin C and potassium. Yovana Mendoza, better known as Rawvana, shared a way to use these nutritious tubers as an amazingly filling base for healthy toppings in this guacamole-loaded sweet potato.
INGREDIENTS

1 sweetpotato , raw sweet potato

1/2 cup romaine lettuce

1 fruit without skin and seed Avocados, raw, California

2 medium whole tomato

1/4 medium red onion
-
1 tbsp fresh cilantro
-
1/2 yields lime juice

3 tbsp Tahini Sesame Paste

2 tbsp Lemon Juice
DIRECTIONS

Wash your sweet potatoes and pierce holes in them with a fork.

Preheat the oven to 400F and roast your sweet potatoes for 25 to 45 minutes (depending on thickness).

In a medium-sized bowl, mash together avocado, tomatoes, onion, cilantro, lime juice and sale to taste.

In a small bowl or mason jar, whisk together tahini and lemon juice.

Once sweet potatoes have cooled, place on a bed of lettuce.

Cut sweet potato open down the middle, stuff with guacamole and drizzle with tahini dressing.
