Grown Up Grilled Cheese with Basil Aioli

Grown Up Grilled Cheese with Basil Aioli is full of flavor and good nutrition. Fortify your grilled cheese with healthy substitutes like replacing processed cheese with part-skim, all natural mozzarella cheese and high fat mayonnaise for Greek yogurt. A handful of spinach adds beneficial fiber and vitamins and minerals. And swapping white bread for a high fiber, low carbohydrate tortilla helps to prevent your blood sugar from spiking.

INGREDIENTS

  • 2 tbsp Greek Yogurt - Plain
  • 4 leaf fresh basil leaves
  • 1/2 garlic clove
  • 1 Lemon Wedge Juice, Raw
  • 1 pinch sea salt
  • 1 dash ground black pepper
  • 2 serving Joseph's Flax, Oat Bran & Whole Wheat Flour Tortillas
  • 3/4 cup spinach, baby, raw, full nutrient data, organic
  • 1/3 cup cherry tomatoes
  • 4 Part Skim Mozzarella Cheese, sliced

DIRECTIONS

1 Combine all ingredients for the basil aioli (Greek yogurt through fresh ground black pepper) in a small bowl
2 Heat a non-stick pan over medium heat.
3 Spread basil aioli over one half of tortillas. Top with spinach, tomatoes and then cheese.
4 Fold tortillas in half and grill, cheese side first, until outside is crispy and cheese is melted.
5 Let sit for a few minutes. Slice in half. Enjoy!
