This homemade baba ghanoush recipe uses grilled zucchini instead of traditional eggplant for an easy-to-make, flavorful dip or spread.
INGREDIENTS

1 tbsp 100% Lemon Juice

1 tbsp extra-virgin olive oil

2 zucchini(s)

3 tbsp Tahini

2 garlic clove

1 pinch sea salt

1/4 tsp ground cumin

1 pinch Spices - Smoked Paprika

TIP: Cut the zucchini lengthwise into 4 slices each.

Prepare an indoor or outdoor grill. In a small bowl, whisk together the lemon juice and oil. Pour into a 9- x 13-inch dish. Add the zucchini slices and toss to fully coat with the lemon vinaigrette. Grill the zucchini over medium-high until well cooked and rich grill marks form, about 5 minutes per side.

Add the grilled zucchini, tahini, garlic, salt, cumin, and paprika to a food processor. Cover and pulse until desired consistency is reached.

Transfer to a medium bowl, cover, and chill until ready to serve.
